Homemade Oreo’s have been on my mind lately. I’ve been seeing and hearing about them a lot lately, with my niece’s birthday being tomorrow, I thought what a perfect occasion to try them out! And now I know what everyone was ranting and raving about! They are amazing!

And of course I put my own spin on things.. pink filling for my pretty in pink 5-year-old niece!
I didn’t stop there! I couldn’t think of a better way to spend my sunny afternoon than cooking, listening to my favorite album (right now: Adele’s new album 21), with the sun shinning through and windows open to feel that Oklahoma breeze!
I made homemade Mac & Cheese!
As delicious as it was, it was ended up being a little bit more work than I was anticipating.

For those cheese lovers out there: this is for you! So much cheese!

Like I said.. There was a lot going on!

Whenever you’re in the mood for some comfort food and your mom isn’t around to cook for you! Try this! It was really very good. My date last night had three helpings! (And I regretfully had two. But hey! It’s spring break!)
Plus, it makes great leftovers! Leftovers that I’m taking to my niece’s birthday party! Or perfect left overs you could make on a Sunday afternoon and continue to eat throughout a busy week of school, studying, and life!
Note: The Mac & Cheese calls for tomatoes. My date does not like tomatoes so I made it without and just added them to mine. I personally liked it better with the tomatoes, gave it more of a grown up & healthier taste (as healthy as mac & cheese can be) but it was still good without it!
